About WIROON
Food begins before the kitchen.

Good food begins with terroir, the rhythm of the seasons, and the people — from farmers to artisans — who understand how to work with nature before it reaches the hands of the chef.
WIROON is named after our curator, Chef Wiroon. More than that, it means to flourish from a grounded quietness. In this spirit of intentional stillness and alignment with nature’s rhythms, all our expressions take form – from our farm to our menu, and from our hospitality to our architecture.
Growth at WIROON is both personal and communal – known, not announced. It is a place where you may simply continue to write your diary.
Chef Wiroon & WIROON
Throughout his culinary journey, Chef Wiroon has learned not to define food by its outward appearances — price, prestige or technical complexity.
Instead, ingredients are allowed to define themselves: through their own character as they unfold over time, and through the history and cultural memory they quietly carry.
At WIROON, Chef Wiroon and his team prepare contemporary Thai cuisine with this attention to ingredient, place and season. We use no MSG or synthetic additives, allowing every ingredient to express its own character fully.
Refinement is not created in the final moments. It is shaped gradually through careful selection, thoughtful preparation, attentive cooking and considered presentation.

Our Farm in Doi Saket
Some of our ingredients begin at our own farm in Doi Saket, in the countryside beyond Chiang Mai.
The farm gives us something more valuable than simply a source of produce. It keeps the kitchen close to the realities of season, weather and the natural limits of what the land can offer.
What grows well changes throughout the year. Sometimes there is abundance; sometimes there is little. The kitchen receives what is ready rather than asking the land to conform to a fixed menu.
For us, seasonality is therefore not an idea added to the menu. It begins with what the land gives us.

Ingredients & Provenance
Not everything should come from our own land.
Thai cooking belongs to many landscapes.
Alongside our farm in Doi Saket and the gardens at WIROON, we work with growers and producers whose ingredients carry the character of their own places.
Rice is one such relationship. We work with and support a rice mill in Ubon Ratchathani, where we have come to understand more closely the cultivation, harvest and milling of Thai Hom Mali rice. This relationship also forms part of the work behind Mira Maris.
As with everything grown, rice changes with place, season and harvest. Understanding those differences is part of understanding the ingredient itself. Knowing where our ingredients come from helps us understand how to use them, and reminds us of the many hands and places behind the food we serve.
Ultimately, all of this finds its place at the table. WIROON is designed with simplicity, calmness and closeness to nature, so that food can remain at its centre and people have the time and space simply to be together.
True food does not end when it is served. It is fulfilled when it is shared.
